Arrowhead, also known as duck potato, is an emergent plant that grows in colonies in shallow lakes and wetlands. It has large arrowhead-shaped leaves and flowering stalks with white flowers. The thin white roots produce large edible white tubers covered with a purplish skin. Beavers, porcupines, and muskrats eat all parts of the plant. Arrowhead is tolerant of polluted waters with high phosphate levels.
